This past weekend we celebrated our 3 year anniversary. My boyfriend is an incredible man and I am so proud to have him in my life. I decided to plan us an afternoon brunch at this lovely turn-of-the-century style carriage house called Pine Ridge Hollow. It is situated on acres of gardens, ponds and flowers and is so peaceful. It offers great home cooked meals and has a very unique furniture show room and gift store attached.
We started our brunch with an order of Beet Chips. Thinly sliced beets, deep fried and seasoned with rosemary and sea salt and served with a homemade goat cheese ranch dipping sauce. So yummy! We enjoyed the Eggs Benedict of the day, poached eggs served on a homemade scone, topped with hollandaise and served with hash browns. Along with the Greek Chicken Pita, marinated chicken breast, peppers, onions, tomatoes, cucumbers, lettuce and crumbled feta folded into a pita. Everything was delicious and highly recommended.
We sipped mimosas, enjoyed the unique rustic atmosphere and we couldn't be more thankful for another amazing year together.
